Description

Looking for a delicious and elegant appetizer to ring in the New Year? These Avocado Shrimp Cups are sure to impress your guests with their vibrant colors and delightful flavors.

Ingredients

Scale
  • 2 ripe avocados
  • 12 large cooked shrimp, peeled and deveined
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/4 teaspoon chili powder
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh cilantro
  • 12 wonton wrappers
  • Cooking spray

Instructions

Step 1: Prepare Avocado Mixture

  • Cut the avocados in half and remove the pits. Scoop out the flesh into a bowl and mash it with a fork until smooth.
  • Add lime juice, olive oil, minced garlic, chili powder, salt, pepper, and chopped cilantro to the mashed avocado. Mix well to combine. Adjust seasoning to taste.

Step 2: Cook Shrimp

  • Heat a skillet over medium heat and lightly coat with cooking spray.
  • Season the shrimp with salt and pepper, then sauté them in the skillet for 2-3 minutes until they are pink and cooked through.
  • Remove the shrimp from the skillet and chop them into bite-sized pieces.

Step 3: Prepare Wonton Cups

  • Preheat the oven to 350°F (175°C).
  • Lightly spray a muffin tin with cooking spray. Press each wonton wrapper into the muffin cups, creating a cup shape.
  • Bake the wonton cups in the preheated oven for 5-7 minutes, or until they are golden brown and crispy.

Step 4: Assemble Avocado Shrimp Cups

  • Spoon the avocado mixture into each wonton cup, filling them halfway.
  • Top each cup with chopped shrimp.
  • Garnish with additional cilantro leaves and a squeeze of lime juice, if desired.

Notes

  • You can customize these avocado shrimp cups by adding diced tomatoes, red onions, or jalapeños for extra flavor and texture.
  • Make sure to use ripe avocados for the creamiest texture.
  • Serve these cups immediately after assembling to prevent the wonton wrappers from becoming soggy.
