- 2 ripe avocados
- 12 large cooked shrimp, peeled and deveined
- 1 lime, juiced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1/4 teaspoon chili powder
- Salt and pepper to taste
- 2 tablespoons chopped fresh cilantro
- 12 wonton wrappers
- Cooking spray
Instructions
Step 1: Prepare Avocado Mixture
- Cut the avocados in half and remove the pits. Scoop out the flesh into a bowl and mash it with a fork until smooth.
- Add lime juice, olive oil, minced garlic, chili powder, salt, pepper, and chopped cilantro to the mashed avocado. Mix well to combine. Adjust seasoning to taste.
Step 2: Cook Shrimp
- Heat a skillet over medium heat and lightly coat with cooking spray.
- Season the shrimp with salt and pepper, then sauté them in the skillet for 2-3 minutes until they are pink and cooked through.
- Remove the shrimp from the skillet and chop them into bite-sized pieces.
Step 3: Prepare Wonton Cups
- Preheat the oven to 350°F (175°C).
- Lightly spray a muffin tin with cooking spray. Press each wonton wrapper into the muffin cups, creating a cup shape.
- Bake the wonton cups in the preheated oven for 5-7 minutes, or until they are golden brown and crispy.
Step 4: Assemble Avocado Shrimp Cups
- Spoon the avocado mixture into each wonton cup, filling them halfway.
- Top each cup with chopped shrimp.
- Garnish with additional cilantro leaves and a squeeze of lime juice, if desired.
