Baked apples with cinnamon and raisins are a delightful and nutritious dessert, perfect for those following a renal diet. This recipe is designed to be kidney-friendly, focusing on ingredients that are low in potassium and phosphorus. The combination of sweet apples, aromatic cinnamon, and plump raisins creates a comforting treat that can be enjoyed by everyone, including those managing kidney health.
Ingredients
- 4 medium apples (such as Fuji or Gala)
- 1/4 cup raisins
- 1/4 cup packed light brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 cup unsalted butter, cut into small pieces
- 1/2 cup apple juice or water
Instructions
Step 1: Preheat and Prepare
- Preheat your oven to 350°F (175°C).
- While the oven is heating, wash and core the apples.
- Ensure you remove the seeds and create a cavity large enough to hold the filling but not so large that the apple falls apart.
Step 2: Mix the Filling
- In a small bowl, combine the raisins, light brown sugar, ground cinnamon, and ground nutmeg.
- Mix well to ensure the raisins are evenly coated with the sugar and spices.
Step 3: Stuff the Apples
- Place the cored apples in a baking dish.
- Evenly distribute the raisin mixture among the apples, stuffing it into the cavities.
- Top each stuffed apple with a few pieces of the unsalted butter.
Step 4: Bake
- Pour the apple juice or water into the bottom of the baking dish. This will help to steam the apples and keep them moist during baking.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
- After 25 minutes, remove the foil and bake for an additional 20 minutes, or until the apples are tender and the filling is bubbly.

- Choosing Apples: Opt for apples that are firm and hold their shape well when baked, such as Fuji, Gala, or Honeycrisp. Softer varieties may become too mushy.
- Customizing the Filling: You can add a handful of chopped nuts or swap raisins for dried cranberries if desired, but keep in mind the nutritional adjustments.
- Serving Suggestions: Serve the baked apples warm, either on their own or with a dollop of whipped cream or a scoop of vanilla ice cream for a more indulgent treat.
- Storage: Store any leftovers in an airtight container in the refrigerator. They can be reheated in the microwave or oven before serving.
