Description

As the fresh aromas of grilled cod with lemon and herbs spread in the mouth, one feels like being on the sunny shores of the Mediterranean.

Ingredients

Scale
  • 4 cod fillets (about 6 ounces each)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • Juice of 1 lemon
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste
  • Lemon slices for garnish

Instructions

Step 1: Preheat the Oven

  • Preheat your oven to 400°F (200°C).
  • Line a baking sheet with parchment paper or lightly grease it with olive oil to prevent sticking.

Step 2: Prepare the Cod

  • Pat the cod fillets dry with paper towels and place them on the prepared baking sheet.
  • In a small bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, chopped parsley, and chopped dill until well combined.
  • Brush the mixture over each cod fillet, ensuring they are evenly coated. Season with salt and pepper to taste.

Step 3: Bake the Cod

  • Place the baking sheet in the preheated oven and bake the cod for 12-15 minutes, or until the fish is opaque and flakes easily with a fork.

Step 4: Serve

  • Once baked, remove the cod from the oven and transfer it to serving plates.
  • Garnish with lemon slices and additional chopped herbs if desired.
  • Serve the baked cod hot, accompanied by your favorite side dishes such as steamed vegetables, quinoa, or a fresh green salad.

Notes

  • For extra flavor, you can add a sprinkle of paprika or red pepper flakes to the cod before baking.
  • Make sure to adjust the cooking time based on the thickness of your cod fillets to prevent overcooking.
  • To ensure the fish stays moist, avoid overcrowding the baking sheet and leave some space between each fillet.
  • Feel free to customize the herbs based on your preferences. Thyme, rosemary, or basil can also work well in this recipe.
