Description

Ingredients

  • 4 salmon fillets
  • 1 head of broccoli, cut into florets
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 4 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • 2 cloves of garlic, minced
  • Salt and pepper, to taste

Instructions

Step 1: Preheat Oven & Prep Vegetables

  • Prep the oven to 425°F (220°C)
  • Wash and chop vegetables
  • Cover a baking sheet with parchment paper
  • Arrange veggies evenly on the sheet

Step 2: Prepare Balsamic Herb Sauce

  • Combine 2 tbsp olive oil, 3 tbsp balsamic vinegar, minced garlic, salt, and pepper in a bowl. Mix well for a flavorful balsamic herb sauce.

Step 3: Sear and Roast Vegetables

  • Wait for oven to reach 425°F (220°C)
  • Heat 2 tbsp olive oil in a non-stick skillet
  • Sear salmon fillets skin-side down for 2 minutes
  • Flip and sear the other side for 2 minutes
  • Place seared salmon on the baking sheet with vegetab

Step 4: Combine Salmon, Vegetables, and Sauce

  • Put salmon on the baking sheet with the roasted broccoli and bell pappers. And then add the prepared sauce.

Step 5: Oven Finish

  • Bake the salmon and veggies together in the oven for 10-12 minutes. And then just enjoy!!

Notes

  • Please remove the baking tray while using heat-resistant glove to prevent burns.
