For the Ribs:

  • 2 racks of baby back ribs
  • Salt and pepper, to taste

For the Dry Rub:

  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon salt

For the Homemade BBQ Sauce:

  • 1 cup ketchup
  • 1/2 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper, to taste

Instructions

Step 1: Prepare the Ribs

  • Preheat your grill to 300°F (150°C) for indirect cooking.
  • Remove the membrane from the back of the ribs by sliding a butter knife under the membrane and then pulling it off with a paper towel for better grip.
  • Season both sides of the ribs with salt and pepper.

Step 2: Make the Dry Rub

  • In a small bowl, mix together the brown sugar, smoked paprika, garlic powder, onion powder, chili powder, cumin, black pepper, and salt.
  • Rub the dry rub generously all over the ribs, covering them evenly.

Step 3: Grill the Ribs

  • Place the ribs on the grill over indirect heat.
  • Close the lid and cook for 2.5 to 3 hours, or until the ribs are tender, turning occasionally for even cooking.

Step 4: Prepare the BBQ Sauce

  • In a saucepan, combine the ketchup, apple cider vinegar, brown sugar, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, salt, and pepper.
  • Bring the sauce to a simmer over medium heat, then reduce the heat to low and let it simmer for 15-20 minutes, stirring occasionally, until the sauce thickens slightly.

Step 5: Glaze the Ribs

  • During the last 15 minutes of cooking, baste the ribs generously with the homemade BBQ sauce, turning them occasionally to coat evenly.
  • Continue cooking until the sauce is caramelized and sticky.

Step 6: Serve and Enjoy

  • Once the ribs are done, remove them from the grill and let them rest for a few minutes.
  • Cut the ribs between the bones and serve with extra BBQ sauce on the side.

Notes

  • For extra flavor, soak wood chips in water for 30 minutes, then add them to the coals for a smokier taste.
  • Adjust the sweetness and tanginess of the BBQ sauce according to your preference by adding more or less brown sugar and vinegar.
  • If you don’t have a grill, you can also cook the ribs in the oven at 300°F (150°C) for the same amount of time.
