Ingredients
- 1 cup all-purpose flour
- 1 cup milk
- 2 large eggs
- 1 tablespoon melted butter
- 1/2 teaspoon baking powder
- Pinch of salt
- Caviar (preferably sturgeon or salmon)
- Sour cream or crème fraîche, for serving
- Fresh chives or dill, for garnish
Instructions
Step 1: Prepare the Blini Batter
- In a mixing bowl, whisk together the flour, milk, eggs, melted butter, baking powder, and salt until smooth.
- Let the batter rest for about 10 minutes to allow the baking powder to activate.
Step 2: Cook the Blini
- Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
- Pour about 2 tablespoons of batter onto the skillet for each blini, spreading it out slightly to form a small pancake.
- Cook for 1-2 minutes, or until bubbles form on the surface of the blini and the edges begin to lift.
- Flip the blini and cook for an additional 1-2 minutes, or until lightly golden brown on both sides.
- Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
Step 3: Assemble the Caviar on Blini
- Once all the blini are cooked, let them cool slightly.
- Place a dollop of sour cream or crème fraîche on each blini.
- Top with a small spoonful of caviar.
- Garnish with fresh chives or dill.
