Ingredients
- 1 cup rice
- 8 cups water
- 1 boneless, skinless chicken breast, diced
- 1 tbsp oyster sauce
- 2 tsp cornstarch
- 1Â tbsp chicken bouillon
- 2 tbsp vegetable oil
- 1-inch piece of ginger, grated
- Salt and pepper to taste
- Optional toppings: sliced green onions, chopped cilantro, fried shallots, soy sauce
Instructions
Step 1: Prepare the Rice
- Rinse the rice under cold water until the water runs clear.
- In a pot, combine the rice and 8 cups of water.
- Peel and chop ginger into thin slices, and then into thin strips.
- Chop a few strands of cilantro and green onion into small pieces.
- Gently cut the chicken breast into thin slices.
Step 2: Prepare the chicken
- Add 1 tbsp oyster sauce, add 2 tsp cornstarch, 1 chicken bouillon, 2 tbsp water.
- Mix and massage the marinade for about 30 seconds.
- Add 2 tbsp vegetable oil into the bowl, blending in 20-30 seconds
Step 3: Cook the rice
- Start to cook the rice with 8 cups of water. Bring to a boil over medium-high heat, then reduce the heat to low.
- Cover and simmer for 15-20 minutes, or until the rice is soft and porridge-like in consistency, stirring occasionally.
Step 4: cook the chicken
- Turn up the heat, and add the chicken into the bowl, and then mix and separate the pieces, cook 1-3 minutes.
Step 5: Serve
- Add 1 tsp salt, 1 tsp chicken bouillon, minced ginger and mix completely.
- Transfer congee into bowl and add green onion and cilantro.
- Then just enjoy
