Description

The aroma of ripe tomatoes and herbs simmering on the stove create a sense of warmth and comfort that is unmistakable. The rich and velvety texture of this soup, along with its chunky bits of tomato, creates a symphony of flavors that is nothing short of heavenly.

Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) whole peeled tomatoes
  • 1 can (14 ounces) crushed tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon sugar
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup heavy cream (optional)
  • Fresh basil leaves for garnish (optional)

Instructions

Step 1:

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic.
  • Cook until softened, about 5 minutes.

Step 2:

  • Pour in the whole peeled tomatoes, crushed tomatoes, and vegetable broth.
  • Stir in sugar, dried basil, dried oregano, salt, and pepper.
  • Bring the mixture to a simmer.

Step 3:

  • Reduce heat to low and let the soup simmer uncovered for 20-25 minutes, stirring occasionally.

Step 4:

  • Once the soup has thickened slightly, remove it from heat.
  • If desired, use an immersion blender to puree the soup until smooth.
  • Stir in heavy cream for added creaminess.

Notes

  • Use ripe, fresh tomatoes – the quality of the tomatoes used in the recipe is crucial for the soup’s flavor. Use ripe, fresh tomatoes for the best taste.
  • Add some acidity – adding a splash of vinegar or a squeeze of lemon juice can balance the sweetness of the tomatoes and add a hint of tartness to the soup.
  • Don’t skimp on the cream – a dollop of heavy cream or coconut cream can enhance the creaminess of the soup and add richness to the flavor. Add gradually, stirring constantly, until the desired consistency is achieved.
