Description

Cornbread is a treasured dish that holds a special place in the African-American culinary tradition and is the dish of choice for most Kwanzaa celebrations. This traditional cornbread recipe is simple, flavorful, and perfect for sharing with family and friends during the holiday season. Its golden crust and moist interior make it an ideal accompaniment to a Kwanzaa feast.

Ingredients

Scale
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup vegetable oil or melted butter
  • 2 large eggs
  • 2 tablespoons honey (optional, for added sweetness)
  • 1/4 cup creamed corn (optional, for extra moisture)

Instructions

Step 1:

  • Preheat your oven to 400°F (200°C).
  • Grease a 9-inch square or round baking dish with butter or oil to prevent sticking.

Step 2:

  • In a large mixing bowl, whisk together the cornmeal, flour, sugar, baking powder, and salt until well combined.

Step 3:

  • In a separate bowl, mix the buttermilk, vegetable oil or melted butter, eggs, and honey (if using).
  • Beat until the mixture is smooth and the ingredients are fully incorporated.

Step 4:

  • Pour the wet ingredients into the dry ingredients and stir until just combined. If using, fold in the creamed corn gently.
  • Pour the batter into the prepared baking dish and spread it out evenly.

Step 5:

  • Bake in the preheated oven for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Allow the cornbread to cool slightly in the pan before slicing and serving.

Notes

  • For a richer flavor, substitute half of the buttermilk with heavy cream.
  • Add a cup of shredded cheddar cheese and a diced jalapeño for a savory twist.
  • Serve warm with butter or a drizzle of honey for extra deliciousness.
