Ingredients
- 1 Tbsp olive oil
- 1 medium onion, finely diced
- 2 cups chicken broth or stock
- 2 (15 oz) cans white beans, drained and rinsed
- 1 (15 oz can corn, drained
- 1 (10 oz) can Rotel diced tomatoes with green chilis, with juice
- 1 tsp chili powder (use 1/2 tsp for milder chili)
- 1 tsp cumin powder
- 1 tsp salt, or to taste
- 0.4 – 1.5 oz packet ranch dip mix
- 2 chicken breasts
- 8 oz cream cheese, cut into cubes
- 1 Tbsp fresh lime juice

Instructions
Step 1: cook the soup
- In a large Dutch oven or pot, heat olive oil over medium heat. Add diced onion and sauté until soft.
- Pour in chicken broth, white beans, corn, Rotel diced tomatoes with green chilis (including the juice), chili powder, cumin powder, and salt. Stir well to combine.
- Sprinkle in the ranch dip mix and mix thoroughly.
Step 2: cook the chicken
- Place whole chicken breasts into the pot. Cover and simmer for 25-30 minutes, or until chicken is cooked through.
- Remove the cooked chicken from the pot and shred it using two forks.
Step 3: mixing
- Return the shredded chicken to the pot and add the cream cheese cubes and fresh lime juice. Stir until the cheese is melted and well incorporated.
- Continue to simmer for an additional 10 minutes, stirring occasionally, until the chili reaches your desired consistency and all flavors have melded together.
- Adjust seasoning to taste with additional salt, if needed.
Step 4: End and enjoy
- Serve in bowls, garnished with your choice of toppings such as sliced green onions, chopped cilantro, shredded cheese, or a dollop of sour cream.
