Ingredients
- 4 large russet potatoes, peeled
- 1 onion
- 2 eggs, beaten
- 1/4 cup all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Vegetable oil, for frying
Instructions
Step 1: Grate Potatoes and Onion
- Using a box grater or a food processor fitted with a grating attachment, grate the peeled potatoes and onion.
- Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.
Step 2: Mix Ingredients
- In a large mixing bowl, combine the grated potatoes and onion with beaten eggs, flour, salt, and black pepper.
- Mix well until everything is evenly combined.
Step 3: Heat Oil
- In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking.
Step 4: Fry Latkes
- Take a spoonful of the potato mixture and carefully drop it into the hot oil, flattening it slightly with the back of the spoon to form a pancake shape.
- Fry the latkes in batches, making sure not to overcrowd the skillet.
- Cook for 3-4 minutes on each side, or until golden brown and crispy.
- Once cooked, transfer the latkes to a paper towel-lined plate to drain excess oil.
Step 5: Serve
- Serve the latkes hot, accompanied by applesauce and sour cream if desired.
