Instructions

Step 1: Grate Potatoes and Onion

  • Using a box grater or a food processor fitted with a grating attachment, grate the peeled potatoes and onion.
  • Place the grated potatoes and onion in a clean kitchen towel and squeeze out excess moisture.

Step 2: Mix Ingredients

  • In a large mixing bowl, combine the grated potatoes and onion with beaten eggs, flour, salt, and black pepper.
  • Mix well until everything is evenly combined.

Step 3: Heat Oil

  • In a large skillet, heat vegetable oil over medium-high heat until hot but not smoking.

Step 4: Fry Latkes

  • Take a spoonful of the potato mixture and carefully drop it into the hot oil, flattening it slightly with the back of the spoon to form a pancake shape.
  • Fry the latkes in batches, making sure not to overcrowd the skillet.
  • Cook for 3-4 minutes on each side, or until golden brown and crispy.
  • Once cooked, transfer the latkes to a paper towel-lined plate to drain excess oil.

Step 5: Serve
