Description

Cucumber sandwiches are a classic, refreshing choice perfect for a light lunch or afternoon tea. Simple and quick to prepare, these sandwiches offer a delightful combination of fresh cucumbers, creamy butter, and soft bread. Follow this easy recipe to make the perfect cucumber sandwiches in no time.

Ingredients

Scale
  • 1 large cucumber, thinly sliced
  • 8 slices of white or whole wheat bread
  • 4 tablespoons unsalted butter, softened
  • 2 tablespoons cream cheese (optional)
  • Salt to taste
  • Freshly ground black pepper (optional)
  • Fresh dill or mint leaves for garnish (optional)

Instructions

Step 1

  • Prepare the cucumber by washing it thoroughly and slicing it into thin, even slices.
  • You can peel the cucumber if desired, but keeping the skin on adds extra color and nutrients.

Step 2

  • Spread a thin layer of softened butter on one side of each slice of bread.
  • If you prefer a creamier texture, mix the butter with cream cheese and spread this mixture instead.

Step 3

  • Arrange the cucumber slices evenly over the buttered side of half the bread slices.
  • Ensure the slices overlap slightly to cover the entire bread surface.
  • Sprinkle a small amount of salt and pepper over the cucumbers for added flavor.

Step 4

  • Top each cucumber-covered slice with another buttered slice of bread, buttered side down, to form a sandwich.
  • If desired, trim the crusts off the sandwiches for a more traditional presentation.
  • Cut each sandwich into quarters or fingers for easy serving.

Notes

  • For extra flavor, add fresh dill or mint leaves between the cucumber slices.
  • Use a mandoline slicer for uniformly thin cucumber slices.
  • Keep the sandwiches covered with a damp paper towel or in an airtight container until ready to serve to prevent them from drying out.
