Ingredients

  • Cooking spray, for the pan
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1 1/4 cups all purpose flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 10 ounces prepared lemon curd
  • 1/2 cup sweetened shredded coconut
  • 1/4 cup slivered almonds
  • Powdered sugar, for dusting, optional

Instructions

Step 1:

  • Preheat oven to 350°F.
  • Grease an 8×8 inch baking pan with cooking spray.

Step 2:

  • Cream the butter and sugar in a large bowl until fluffy.
  • In another bowl, mix the flour, baking soda, and salt. Gradually add the flour mixture to the creamed butter, mixing well.

Step 3:

  • Reserve 1/2 cup of the dough for the topping. Press the remaining dough into the prepared baking dish.
  • Bake for 10 minutes or until the edges are lightly browned.
  • Cool on a wire rack for 10 minutes. Spoon the lemon curd over the cooled crust.
  • In a small bowl, mix the coconut, almonds, and reserved dough.
  • Sprinkle over the lemon curd.

Step 4:

  • Bake for 15 minutes until the topping turns golden brown.
  • Cool completely on a wire rack. Dust with powdered sugar if desired.
  • Cut into bars to serve.
