- Cooking spray, for the pan
- 1/2 cup unsalted butter, softened
- 1/2 cup granulated sugar
- 1 1/4 cups all purpose flour
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 10 ounces prepared lemon curd
- 1/2Â cup sweetened shredded coconut
- 1/4 cup slivered almonds
- Powdered sugar, for dusting, optional
Instructions
Step 1:
- Preheat oven to 350°F.
- Grease an 8×8 inch baking pan with cooking spray.
Step 2:
- Cream the butter and sugar in a large bowl until fluffy.
- In another bowl, mix the flour, baking soda, and salt. Gradually add the flour mixture to the creamed butter, mixing well.
Step 3:
- Reserve 1/2 cup of the dough for the topping. Press the remaining dough into the prepared baking dish.
- Bake for 10 minutes or until the edges are lightly browned.
- Cool on a wire rack for 10 minutes. Spoon the lemon curd over the cooled crust.
- In a small bowl, mix the coconut, almonds, and reserved dough.
- Sprinkle over the lemon curd.
Step 4:
- Bake for 15 minutes until the topping turns golden brown.
- Cool completely on a wire rack. Dust with powdered sugar if desired.
- Cut into bars to serve.
