What are the benefits of Fresh Mozzarella?

Fresh Mozzarella is a soft cheese made from water buffaloes milk that offers several health benefits. It is an excellent source of protein, calcium, and phosphorus, which helps in the growth, repair, and maintenance of important tissues in the body, and strengthens bones and teeth. Additionally, it is a low-calorie and low-fat cheese, making it a healthy option for those who are conscious about their weight. Moreover, Fresh Mozzarella is packed with probiotics that help improve gut health and boost the immune system. It is also a versatile ingredient that enhances the flavor of salads, sandwiches, pasta and can be used in various dishes, providing a delicious and nutritious culinary experience.

Horseradish sauce is a versatile condiment rich in antioxidants, minerals such as calcium, magnesium, and potassium, and immune-boosting compounds such as sinigrin. Sinigrin inhibits the growth of harmful bacteria and viruses, helping to prevent infections like colds, flu, and even pneumonia and bronchitis. Its pungent flavor also acts as a natural decongestant that clears sinuses and provides relief for asthma and allergies. Finally, horseradish sauce neutralizes harmful free radicals, helping to reduce the risk of chronic diseases such as cancer, heart disease, and Alzheimer’s. Overall, Horseradish Sauce is a flavorful and healthy addition to your meals, providing a double benefit of taste and nutrition.

Ingredients:

  • 1 1/4 cup water
  • 1 1/2 teaspoon citric acid
  • 1/4 rennet tablet or 1/4 teaspoon liquid rennet (Not Junket rennet, see note below)
  • 1 gallon milk, whole or 2%, not ultra-pasteurized*
  • 1 teaspoon kosher salt

Step into kitchen right now!! Let’s DIY Homemade Fresh Mozzarella together!!

step 1:Prepare the Citric Acid and Rennet

To prepare, take 1 cup of water and mix in the citric acid until it dissolves completely. Then, in a separate bowl, take 1/4 cup of water and stir in the rennet until it dissolves completely.

Step 2:Warm the Milk

Pour the milk into the pot, then mix in the citric acid solution. Place the pot over medium-high heat and gently stir as you warm it to 90°F.

Step 3:Add the Rennet

After taking the pot off the heat, carefully add the rennet solution while gently stirring. Allow it to sit for 30 seconds before stopping the stirring, covering the pot, and leaving it undisturbed for 5 minutes.

Step 4:Cut the Curds

After the elapsed five minutes, the milk should have solidified and taken on the texture of soft silken tofu. If the consistency is still too liquid, cover the pot again and allow it to sit for an additional five minutes. Once the milk has properly set, proceed to cut it into uniform curds. Make vertical cuts through the curds in parallel lines, followed by horizontal cuts, forming a grid-like pattern. Ensure that your knife reaches all the way down to the bottom of the pan.

Step 5:Cook the Curds

After the elapsed five minutes, the milk should have solidified and taken on the texture of soft silken tofu. If the consistency is still too liquid, cover the pot again and allow it to sit for an additional five minutes. Once the milk has properly set, proceed to cut it into uniform curds. Make vertical cuts through the curds in parallel lines, followed by horizontal cuts, forming a grid-like pattern. Ensure that your knife reaches all the way down to the bottom of the pan.

Step 6:Remove the Curds from Heat and Stir

Remove the pan from the heat and continue stirring gently for another 5 minutes.

Step 7:Separate the Curds from the Whey

Ladle the curds into a microwave-safe bowl with the slotted spoon.

Step 8:Microwave the Curds

Heat the curds in the microwave for one minute. Remove the whey. Wear rubber gloves and fold the curds over a few times. At this stage, the curds will remain loose, resembling cottage cheese.

Step 9:Microwave the Curds to 135°F

Microwave the curds for an additional 30 seconds and then check their internal temperature. If the temperature reads 135°F, proceed with stretching the curds. If not, continue microwaving in 30-second intervals until they reach the required temperature. It is crucial for the curds to reach this temperature to ensure they can be stretched properly.

Step 10:Stretch and Shape the Mozzarella

Sprinkle the salt evenly over the cheese and use your fingers to incorporate it. With both hands, repeatedly stretch and fold the curds. Gradually, you will notice the curds tightening, firming up, and acquiring a glossy sheen. Once this occurs, you can proceed to shape the mozzarella. Create a single large ball, two smaller balls, or several bite-sized bocconcini. Be mindful not to excessively manipulate the mozzarella to avoid overworking it.

Step 11:Using and Storing Your Mozzarella

You can either use the mozzarella immediately or store it in the refrigerator for up to one week. To refrigerate, transfer the mozzarella to a small container. Mix a teaspoon of salt with a cup of cool whey and pour the mixture over the mozzarella. Cover the container and place it in the refrigerator.

In conclusion, making your own DIY Homemade Fresh Mozzarella can be a rewarding and fulfilling experience that yields delicious results. By following this step-by-step guide and using quality ingredients, you’ll be able to create fresh, creamy, and flavorful Mozzarella that’s perfect for a wide range of dishes.
