- 4 large egg whites
- 1/4 cup crumbled feta cheese
- 1 cup fresh spinach leaves, chopped

- 1 clove garlic, minced
- 1 tablespoon olive oil or cooking spray

Instructions
Step 1:Prepare the Ingredients
- Separate the egg whites from the yolks and place the egg whites in a bowl. Whisk them lightly until frothy.
- Wash and chop the spinach leaves.
- Finely chop the onion and mince the garlic.
Step 2:Cook the Spinach and Onion
- Heat the olive oil (or use cooking spray) in a non-stick skillet over medium heat.
- Add the chopped onion and cook until it becomes translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 1 minute, until fragrant.
- Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove the mixture from the skillet and set aside.
Step 3:Cook the Egg Whites
- Wipe the skillet clean and reapply a small amount of olive oil or cooking spray.
- Pour the whisked egg whites into the skillet, tilting the pan to spread them evenly over the surface.
- Cook the egg whites over medium-low heat until they start to set, about 2-3 minutes.
Step 4:Add the Filling
- Evenly distribute the cooked spinach and onion mixture over one half of the omelette.
- Sprinkle the crumbled feta cheese over the spinach mixture.
Step 5:Fold the Omelette and Serve
- Using a spatula, carefully fold the empty half of the omelette over the filling side.
