- 1/4 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/2 cup creamy peanut butter
- 2 tablespoons unsalted butter, melted
- 1 large egg
- 1 teaspoon vanilla extract
- Additional butter or oil for cooking
- Maple syrup, sliced bananas, chopped peanuts (optional toppings)
Instructions
Step 1:
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Step 2:
- In another bowl, mix together the milk, peanut butter, melted butter, egg, and vanilla extract until smooth and creamy.
Step 3:
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Be careful not to overmix; a few lumps are okay.
Step 4:
- Heat a lightly greased skillet or griddle over medium heat.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
- Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
Step 5:
- Serve the peanut butter pancakes warm with your dad’s favorite toppings such as maple syrup, sliced bananas, and chopped peanuts.
