  • 1 large egg
  • 1 teaspoon vanilla extract
  • Additional butter or oil for cooking

Instructions

Step 1:

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 2:

  • In another bowl, mix together the milk, peanut butter, melted butter, egg, and vanilla extract until smooth and creamy.

Step 3:

  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Be careful not to overmix; a few lumps are okay.

Step 4:

  • Heat a lightly greased skillet or griddle over medium heat.
  • Pour 1/4 cup of batter onto the skillet for each pancake.
  • Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.
  • Repeat with the remaining batter, adding more butter or oil to the skillet as needed.

Step 5:

  • Serve the peanut butter pancakes warm with your dad’s favorite toppings such as maple syrup, sliced bananas, and chopped peanuts.

Notes

  • For extra peanut flavor, you can add a handful of chopped peanuts to the batter.
  • If the batter is too thick, you can thin it out with a little more milk.
