Description

This refreshing fruit salad with honey and yogurt dressing has a refreshing taste and makes a healthy and delicious dessert or pre-dinner snack.

Ingredients

Scale
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup apple, cored and diced (peeled if desired)
  • 1 cup pear, cored and diced (peeled if desired)
  • 1/2 cup seedless grapes, halved
  • 1/2 cup honeydew melon, diced
  • 1/2 cup pineapple chunks (fresh or canned in juice, drained)
  • 1/2 cup plain Greek yogurt (low-phosphorus)
  • 2 tablespoons honey
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • Fresh mint leaves for garnish (optional)

Instructions

Step 1: Prepare the Fruits

  • Rinse all the fruits thoroughly under cold water.
  • Hull and slice the strawberries.
  • Dice the apple and pear, optionally peeling them if preferred.
  • Halve the seedless grapes.
  • Dice the honeydew melon and prepare the pineapple chunks if not using pre-cut.

Step 2: Combine the Fruits

  • In a large mixing bowl, gently combine the strawberries, blueberries, apple, pear, grapes, honeydew melon, and pineapple chunks.
  • Toss the fruits gently to ensure an even mix without bruising them.

Step 3: Prepare the Honey and Yogurt Dressing

  • In a separate smaller bowl, whisk together the plain Greek yogurt, honey, fresh lemon juice, and vanilla extract until smooth and well combined.
  • Taste the dressing and adjust the sweetness by adding more honey if desired.

Step 4: Dress the Salad and Serve

  • Drizzle the honey and yogurt dressing over the mixed fruits in the large bowl.
  • Gently toss the salad to ensure all the fruits are evenly coated with the dressing.
  • Transfer the fruit salad to a serving dish or individual bowls.
  • Garnish with fresh mint leaves if using, for an added touch of freshness and color.

Notes

  • Opt for fruits that are lower in potassium and phosphorus to keep the salad kidney-friendly. If you need to substitute any fruits, consult a dietary guide or nutritionist to ensure they fit within renal diet guidelines.
  • Use plain Greek yogurt as it typically has lower phosphorus content. Avoid flavored yogurts which may contain added sugars and phosphorus additives.
  • Maple syrup or agave nectar can be used as alternatives to honey if desired.
  • This fruit salad is best enjoyed fresh. If you need to store it, keep it refrigerated and consume within 24 hours for optimal taste and texture.
