Description
This refreshing fruit salad with honey and yogurt dressing has a refreshing taste and makes a healthy and delicious dessert or pre-dinner snack.
Ingredients
- 1 cup strawberries, hulled and sliced
- 1 cup blueberries
- 1 cup apple, cored and diced (peeled if desired)
- 1 cup pear, cored and diced (peeled if desired)
- 1/2 cup seedless grapes, halved
- 1/2 cup honeydew melon, diced
- 1/2 cup pineapple chunks (fresh or canned in juice, drained)
- 1/2 cup plain Greek yogurt (low-phosphorus)
- 2 tablespoons honey
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon vanilla extract
- Fresh mint leaves for garnish (optional)
Instructions
Step 1: Prepare the Fruits
- Rinse all the fruits thoroughly under cold water.
- Hull and slice the strawberries.
- Dice the apple and pear, optionally peeling them if preferred.
- Halve the seedless grapes.
- Dice the honeydew melon and prepare the pineapple chunks if not using pre-cut.
Step 2: Combine the Fruits
- In a large mixing bowl, gently combine the strawberries, blueberries, apple, pear, grapes, honeydew melon, and pineapple chunks.
- Toss the fruits gently to ensure an even mix without bruising them.
Step 3: Prepare the Honey and Yogurt Dressing
- In a separate smaller bowl, whisk together the plain Greek yogurt, honey, fresh lemon juice, and vanilla extract until smooth and well combined.
- Taste the dressing and adjust the sweetness by adding more honey if desired.
Step 4: Dress the Salad and Serve
- Drizzle the honey and yogurt dressing over the mixed fruits in the large bowl.
- Gently toss the salad to ensure all the fruits are evenly coated with the dressing.
- Transfer the fruit salad to a serving dish or individual bowls.
- Garnish with fresh mint leaves if using, for an added touch of freshness and color.
