Ingredients
- 8 oz spaghetti
- 1 lb shrimp, peeled and deveined
- 4 cloves garlic, minced
- 3 tbsp butter
- 2 tbsp olive oil
- 1/2 tsp red pepper flakes (optional)
- 1/4 cup dry white wine (optional)
- 1/4 cup pasta water (reserved from cooking)
- Juice of half a lemon
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions
Step1: Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain the spaghetti and set it aside.
Step2: Prepare the Shrimp
Pat the shrimp dry with paper towels. Season lightly with salt and pepper.
Step3: Cook the Garlic and Shrimp
In a large skillet, heat the olive oil and 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the shrimp to the skillet in a single layer and cook for 2-3 minutes on each side, until they turn pink and opaque. If using, add the red pepper flakes.
Step4: Deglaze the Pan
If you’re using white wine, pour it into the skillet and let it simmer for 1-2 minutes until slightly reduced.
Step5: Combine Everything
Add the remaining butter to the skillet and allow it to melt. Add the cooked spaghetti and reserved pasta water. Toss everything together until the pasta is well-coated in the garlic butter sauce.
Step6: Finish with Lemon and Herbs
Squeeze the juice of half a lemon over the pasta and sprinkle with chopped parsley. Toss again to combine all the flavors.
Step7: Serve
Taste and adjust seasoning with salt and pepper if needed. Serve immediately with extra parsley and a sprinkle of Parmesan cheese, if desired. Enjoy!
