Ingredients
- ¼ cup balsamic vinegar
- 2 tablespoons olive oil
- 2 teaspoons brown sugar
- 1 teaspoon garlic minced
- 1 teaspoon dried basil
- 1 teaspoon salt
- 4 skinless chicken thigh fillets no bone
- 5 cups Romaine lettuce or cos lettuce leaves, washed and dried
- 1 avocado sliced
- 1 cup cherry tomatoes or grape tomatoes, sliced
- ½ cup bocconcini
- ¼ cup basil leaves thinly sliced
- 1 pinch salt to season
- 1 pinch pepper to season
Instructions
Step 1:
- Preheat grill or grill pan to medium-high heat.
- Prepare the sauce: ¼ cup balsamic vinegar, 2 tablespoons olive oil, 2 teaspoons brown sugar, 1 teaspoon garlic minced, 1 teaspoon dried basil, 1 teaspoon salt
Step 2:
- Season chicken breasts with the prepared sauce 3-5 minutes
Step 3:
- Grill chicken for about 6-8 minutes on each side or until cooked through.
- Remove from grill and let it rest for 5 minutes before slicing.
- While the chicken is resting, arrange tomato and mozzarella slices alternately on a serving platter.
- Tuck fresh basil leaves between the slices.
Step 4:
- Slice the grilled chicken breasts and arrange them over the tomato and mozzarella.
- Drizzle with balsamic glaze if desired.
