Ingredients

  • 4 skinless chicken thigh fillets no bone
  • 5 cups Romaine lettuce or cos lettuce leaves, washed and dried
  • 1 avocado sliced
  • 1 cup cherry tomatoes or grape tomatoes, sliced
  • ½ cup bocconcini
  • ¼ cup basil leaves thinly sliced
  • 1 pinch salt to season
  • 1 pinch pepper to season

Instructions

Step 1:

  • Preheat grill or grill pan to medium-high heat.
  • Prepare the sauce: ¼ cup balsamic vinegar, 2 tablespoons olive oil, 2 teaspoons brown sugar, 1 teaspoon garlic minced, 1 teaspoon dried basil, 1 teaspoon salt

Step 2:

  • Season chicken breasts with the prepared sauce 3-5 minutes

Step 3:

  • Grill chicken for about 6-8 minutes on each side or until cooked through.
  • Remove from grill and let it rest for 5 minutes before slicing.
  • While the chicken is resting, arrange tomato and mozzarella slices alternately on a serving platter.
  • Tuck fresh basil leaves between the slices.

Step 4:

  • Slice the grilled chicken breasts and arrange them over the tomato and mozzarella.
  • Drizzle with balsamic glaze if desired.
