  • 2 whole sea bass, cleaned and scaled (about 11.5 pounds each)
  • 2 lemons (1 sliced for grilling, 1 for juice and zest)
  • 4 cloves garlic, minced
  • 1/4 cup fresh herbs, chopped (such as parsley, thyme, rosemary, or dill)
  • 1/4 cup olive oil
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika (optional, for a hint of smokiness)
  • Fresh herbs for garnish (optional)

Instructions

Step 1:Prepare the Fish

  • Rinse the sea bass under cold water and pat dry with paper towels. Make sure the fish is properly scaled and cleaned, with the fins trimmed if necessary.
  • Using a sharp knife, make 3-4 diagonal slashes on both sides of the fish. This helps the marinade penetrate and the fish cook evenly.

Step 2:Make the Marinade

  • In a small bowl, combine the minced garlic, chopped herbs, olive oil, juice and zest of one lemon, salt, pepper, and smoked paprika (if using). Mix well.
  • Rub the marinade all over the fish, including inside the slashes and the cavity. If you have time, let the fish marinate in the refrigerator for 30 minutes to an hour to enhance the flavor.

Step 3:Prepare the Grill

  • Preheat the grill to medium-high heat. If using a charcoal grill, make sure the coals are evenly spread and covered with white ash. If using a gas grill, preheat it to about 400°F (200°C).
  • Oil the grill grates well to prevent sticking.

Step 4:Grill the Sea Bass

  • Place the marinated sea bass on the hot grill. Add slices of the second lemon directly on the grill grates or place them on the fish for added flavor.
  • Grill the fish for about 5-7 minutes per side, depending on the thickness of the fish. The fish is done when it flakes easily with a fork and has reached an internal temperature of 145°F (63°C).
  • Avoid moving the fish too much during grilling to prevent it from sticking and breaking apart. Use a wide spatula to turn the fish gently.

Step 5:Serve

  • Transfer the grilled sea bass to a serving platter. Garnish with fresh herbs and additional lemon wedges for squeezing over the fish.
  • Serve immediately with your choice of sides, such as grilled vegetables, a fresh salad, or rice.

Notes

  • If you don’t have access to a grill, you can also cook the sea bass under the broiler in your oven. Place the fish on a baking sheet and broil on high for 5-7 minutes per side.
  • For extra flavor, stuff the cavity of the fish with additional herbs and lemon slices before grilling.
  • To keep the fish from sticking, you can place it on a piece of aluminum foil or a fish grilling basket.
