For the Coconut Pecan Filling:

  • 1 1/2 cups evaporated milk
  • 4 large egg yolks
  • 1 1/2 cups packed light brown sugar
  • 3/4 cup unsalted butter
  • 2 2/3 cups shredded sweetened coconut
  • 1 1/2 cups chopped pecans
  • 2 teaspoons pure vanilla extract
  • A dash of fine salt

For the Cake:

  • Cooking spray
  • 2 cups all-purpose flour
  • 1 3/4 cups granulated sugar
  • 2/3 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon fine salt
  • 2 large eggs
  • 1 cup buttermilk
  • 1/2 cup vegetable or canola oil
  • 2 teaspoons pure vanilla extract
  • 1 cup boiling water
  • 1 teaspoon espresso powder (optional)

For the Optional Ganache:

  • 2 cups semisweet chocolate chips
  • 1 cup heavy cream
  • 2 teaspoons pure vanilla extract

Instructions

Step 1: Prepare the Coconut Pecan Filling

  • Mix evaporated milk and egg yolks in a saucepan, then add brown sugar and butter.
  • Cook over medium heat, stirring until thickened.
  • Remove from heat and add coconut, pecans, vanilla, and salt. Let cool.

Step 2: Make the Cake

  • Preheat oven to 350°F. Grease and line three 8-inch round cake pans.
  • Mix dry ingredients in a bowl and wet ingredients in another.
  • Combine wet and dry ingredients, then add boiling water.
  • Divide batter into pans and bake for 25-28 minutes.
  • Cool cake layers on racks.

Step 3: Assemble the Layers

  • Place one cake layer on a plate and spread with filling.
  • Repeat with remaining layers.

Step 4: Finish With the Optional Ganache

  • Heat cream until hot but not boiling, then pour over chocolate chips.
  • Let stand, then whisk until smooth. Let cool until thickened.
  • Frost cake with ganache.
