Description
This homemade German Chocolate Cake, specially prepared for Mother’s Day, will be a delicious surprise and a heartwarming touch for your mom.
Ingredients
For the Coconut Pecan Filling:
- 1 1/2 cups evaporated milk
- 4 large egg yolks
- 1 1/2 cups packed light brown sugar
- 3/4 cup unsalted butter
- 2 2/3 cups shredded sweetened coconut
- 1 1/2 cups chopped pecans
- 2 teaspoons pure vanilla extract
- A dash of fine salt
For the Cake:
- Cooking spray
- 2 cups all-purpose flour
- 1 3/4 cups granulated sugar
- 2/3 cup unsweetened cocoa powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon baking powder
- 3/4 teaspoon fine salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable or canola oil
- 2 teaspoons pure vanilla extract
- 1 cup boiling water
- 1 teaspoon espresso powder (optional)
For the Optional Ganache:
- 2 cups semisweet chocolate chips
- 1 cup heavy cream
- 2 teaspoons pure vanilla extract
Instructions
Step 1: Prepare the Coconut Pecan Filling
- Mix evaporated milk and egg yolks in a saucepan, then add brown sugar and butter.
- Cook over medium heat, stirring until thickened.
- Remove from heat and add coconut, pecans, vanilla, and salt. Let cool.
Step 2: Make the Cake
- Preheat oven to 350°F. Grease and line three 8-inch round cake pans.
- Mix dry ingredients in a bowl and wet ingredients in another.
- Combine wet and dry ingredients, then add boiling water.
- Divide batter into pans and bake for 25-28 minutes.
- Cool cake layers on racks.
Step 3: Assemble the Layers
- Place one cake layer on a plate and spread with filling.
- Repeat with remaining layers.
Step 4: Finish With the Optional Ganache
- Heat cream until hot but not boiling, then pour over chocolate chips.
- Let stand, then whisk until smooth. Let cool until thickened.
- Frost cake with ganache.
