Homemade Lemon Posset is a velvety, tangy dessert with a luscious texture, made from just a few simple ingredients, including cream, sugar, and zesty lemon juice.
Ingredients

- 2 large lemons
- 2/3 cup superfine sugar
- 2 cups double cream or heavy cream
- 1 cup raspberries for garnish
Instructions
Step 1:
- Grate lemon zest finely and juice the lemons, removing seeds.
- In a saucepan, combine lemon juice, zest, and sugar.
- Simmer gently for about 4 minutes, then remove from heat.
Step 2:
- In another pot, bring cream to a gentle boil over low heat for 5 minutes. Avoid rapid boiling.
- Slowly whisk lemon syrup into the hot cream. Strain the mixture.
Step 3:
- Let it cool slightly, then pour into ramekins or glasses. Chill for at least 4 hours.
- Before serving, let it sit at room temperature for 5 minutes. Garnish with berries.
