Ingredients

- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 tablespoons unsalted butter, cold and cut into small cubes
- 1 tablespoon dried culinary lavender buds
- 2/3 cup heavy cream
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
Step 1:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
- In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
Step 2:
- Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
- Stir in the dried lavender buds until evenly distributed throughout the mixture.
Step 3:
- In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until a dough forms. Be careful not to overmix.
Step 4:
- Transfer the dough onto a lightly floured surface. Pat it into a circle about 1 inch thick.
- Using a sharp knife or a biscuit cutter, cut the dough into 8 equal wedges or rounds.
- Place the scones onto the prepared baking sheet, leaving some space between each one.
- Brush the tops of the scones with a little extra cream for a golden finish.
- Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown on top.
- Remove from the oven and let them cool slightly before serving.
