Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into small cubes
  • 1 tablespoon dried culinary lavender buds
  • 2/3 cup heavy cream
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions

Step 1:

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt until well combined.

Step 2:

  • Add the cold butter cubes to the flour mixture. Using a pastry cutter or your fingers, cut the butter into the flour until the mixture resembles coarse crumbs.
  • Stir in the dried lavender buds until evenly distributed throughout the mixture.

Step 3:

  • In a separate bowl, whisk together the heavy cream, egg, and vanilla extract until well combined.
  • Pour the wet ingredients into the dry ingredients and mix until a dough forms. Be careful not to overmix.

Step 4:

  • Transfer the dough onto a lightly floured surface. Pat it into a circle about 1 inch thick.
  • Using a sharp knife or a biscuit cutter, cut the dough into 8 equal wedges or rounds.
  • Place the scones onto the prepared baking sheet, leaving some space between each one.
  • Brush the tops of the scones with a little extra cream for a golden finish.
  • Bake in the preheated oven for 12-15 minutes, or until the scones are golden brown on top.
  • Remove from the oven and let them cool slightly before serving.

Notes

  • For extra flavor, you can sprinkle a little sugar on top of the scones before baking.
  • Make sure your butter is cold for the best texture.
  • If you prefer a stronger lavender flavor, you can increase the amount of dried lavender buds slightly.
