- 1 pound (450g) large shrimp, peeled and deveined
- 8 ounces (225g) linguine or spaghetti
- 4 tablespoons (60ml) olive oil
- 4 cloves garlic, minced
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup (120ml) chicken broth
- 1/4 cup (60ml) fresh lemon juice
- Zest of 1 lemon
- Salt and black pepper to taste
- 2 tablespoons (30g) unsalted butter
- 1/4 cup (15g) chopped fresh parsley
- Grated Parmesan cheese for serving (optional)
Instructions
Step 1: Prepare the Shrimp
- Pat the shrimp dry with paper towels and season with salt and black pepper.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
- Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.
Step 2: Cook the Pasta
- Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.
Step 3: Make the Sauce
- In the same skillet used for cooking the shrimp, add the remaining 2 tablespoons of olive oil.
- Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about 1 minute until fragrant.
- Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
- Bring the sauce to a simmer and let it cook for 2-3 minutes to reduce slightly.
- Stir in the lemon zest and butter until the butter is melted and the sauce is smooth.
Step 4: Combine and Serve
- Return the cooked shrimp to the skillet, along with the drained pasta.
- Toss everything together until the shrimp and pasta are evenly coated with the sauce.
- Stir in the chopped parsley and season with additional salt and black pepper if needed.
- Serve the Lemon Garlic Shrimp Scampi hot, garnished with grated Parmesan cheese if desired.
