Description

This classic dish features succulent shrimp sautéed in a zesty lemon and garlic butter sauce, creating a perfect balance of tangy and savory flavors.


Ingredients

  • 1 pound (450g) large shrimp, peeled and deveined
  • 8 ounces (225g) linguine or spaghetti
  • 4 tablespoons (60ml) olive oil
  • 4 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup (120ml) chicken broth
  • 1/4 cup (60ml) fresh lemon juice
  • Zest of 1 lemon
  • Salt and black pepper to taste
  • 2 tablespoons (30g) unsalted butter
  • 1/4 cup (15g) chopped fresh parsley
  • Grated Parmesan cheese for serving (optional)

Instructions

Step 1: Prepare the Shrimp

  • Pat the shrimp dry with paper towels and season with salt and black pepper.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat.
  • Add the shrimp to the skillet and cook until pink and opaque, about 2-3 minutes per side. Remove the shrimp from the skillet and set aside.

Step 2: Cook the Pasta

  • Cook the linguine or spaghetti according to the package instructions until al dente. Drain and set aside.

Step 3: Make the Sauce

  • In the same skillet used for cooking the shrimp, add the remaining 2 tablespoons of olive oil.
  • Add the minced garlic and red pepper flakes (if using) to the skillet. Cook for about 1 minute until fragrant.
  • Pour in the chicken broth and lemon juice, scraping up any browned bits from the bottom of the skillet.
  • Bring the sauce to a simmer and let it cook for 2-3 minutes to reduce slightly.
  • Stir in the lemon zest and butter until the butter is melted and the sauce is smooth.

Step 4: Combine and Serve

  • Return the cooked shrimp to the skillet, along with the drained pasta.
  • Toss everything together until the shrimp and pasta are evenly coated with the sauce.
  • Stir in the chopped parsley and season with additional salt and black pepper if needed.
  • Serve the Lemon Garlic Shrimp Scampi hot, garnished with grated Parmesan cheese if desired.

Notes

  • For extra flavor, you can add a splash of white wine to the sauce along with the chicken broth.
