Ingredients
- 4 large sweet potatoes, peeled and cubed
- 2 tablespoons unsalted butter, melted
- 1/4 cup honey (or maple syrup for a vegan option)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- Optional toppings: chopped pecans, marshmallows (ensure they’re kosher for Passover)
Instructions
Step1: Cook the Sweet Potatoes:
- Place the peeled and cubed sweet potatoes in a large pot, cover them with water, and bring to a boil.
- Reduce the heat and let them simmer for 15-20 minutes, or until tender. Drain well.
Step2: Mash the Sweet Potatoes:
- Return the drained sweet potatoes to the pot or a large bowl. Mash until smooth using a potato masher or electric mixer.
Step3: Mix in the Ingredients:
- Add the melted butter, honey (or maple syrup), cinnamon, nutmeg, ginger, salt, and pepper. Stir well to combine.
Step4: Optional Toppings and Serve:
- Transfer to a serving dish and, if desired, top with chopped pecans or marshmallows (broil marshmallows briefly if you want them toasted). Serve warm.
