- 1 lb (450g) boneless, skinless chicken breasts, cut into strips
- 2 cups matzo meal
- 2 large eggs, beaten
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Cooking spray or olive oil, for greasing
Instructions
Step 1:
- Preheat the oven to 400°F (200°C).
- Line a baking sheet with parchment paper and lightly grease it with cooking spray or olive oil.
Step 2:
- In a shallow dish, combine matzo meal, garlic powder, onion powder, paprika, salt, and pepper.
- Mix well to evenly distribute the seasonings.
Step 3:
- Dip each chicken strip into the beaten eggs, allowing any excess to drip off.
- Then coat the chicken strip in the seasoned matzo meal mixture, pressing gently to adhere the coating evenly.
Step 4:
- Place the coated chicken tenders on the prepared baking sheet, leaving a little space between each piece.
- Lightly spray the tops of the tenders with cooking spray or drizzle with olive oil.
Step 5:
- Bake in the preheated oven for 18-20 minutes, or until the chicken is cooked through and the coating is golden brown and crispy.
