Ingredients

Scale
  • 1 package (14 ounces) refrigerated pie crusts
  • 4 large eggs
  • 1 cup half-and-half
  • 1/2 cup grated cheese (cheddar, Swiss, or Gruyere)
  • 1/4 cup diced cooked bacon or ham
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Cooking spray

Instructions

Step 1:

Preheat the oven to 375°F (190°C). Spray a mini muffin tin with cooking spray and set aside.

Step 2:

  • Roll out the pie crusts on a lightly floured surface.
  • Using a round cookie cutter or a drinking glass, cut out circles from the dough that are slightly larger than the mini muffin tin openings.
  • Press the dough circles into the muffin tin, forming mini crusts.

Step 3:

  • In a mixing bowl, whisk together the eggs and half-and-half until well combined.
  • Stir in the grated cheese, diced bacon or ham, chopped green onions, salt, and pepper.

Step 4:

  • Carefully pour the egg mixture into each mini crust, filling them nearly to the top.
  • Bake the mini quiches in the preheated oven for 20-25 minutes, or until the filling is set and the crust is golden brown.
  • Remove the mini quiches from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • You can customize these mini quiches by adding your favorite ingredients such as mushrooms, spinach, or diced tomatoes.
  • Serve the mini quiches warm or at room temperature for the best flavor.
  • Leftover mini quiches can be stored in an airtight container in the refrigerator for up to 3 days. Simply reheat them in the oven or microwave before serving.
