Description

This is a quick and easy Miso Soup Noodles recipe that combines hearty veggies, flavorful noodles, and nourishing miso broth for a well-balanced and tasty option.


Ingredients

  • 8 ounces of dried udon noodles
  • 4 cups of vegetable or chicken broth
  • 4 tablespoons of white miso paste
  • 1 cup of sliced mushrooms (shiitake, button, or your choice)
  • 1 block of firm tofu, cubed
  • 2 green onions, thinly sliced
  • 2 tablespoons of soy sauce
  • 1 tablespoon of sesame oil
  • 1 teaspoon of grated ginger
  • 2 cloves of garlic, minced
  • Optional toppings: seaweed strips, sesame seeds, chili flakes

Instructions

Step 1: Cook the Noodles

  •  Bring a pot of water to a boil.
  • Add the udon noodles and cook according to the package instructions until al dente.
  • Once cooked, drain the noodles and set them aside.

Step 2: Prepare the Soup Base

  • In a separate pot, heat the vegetable or chicken broth over medium heat.
  • Add the miso paste to the broth, whisking until it’s fully dissolved.
  • Stir in the sliced mushrooms, cubed tofu, green onions, soy sauce, sesame oil, grated ginger, and minced garlic.
  • Let the soup simmer for 5-7 minutes, allowing the flavors to meld together.

Step 3: Combine Noodles and Soup

  • Once the soup is ready, divide the cooked udon noodles into four serving bowls.
  • Ladle the miso soup mixture over the noodles, ensuring each bowl has an equal amount of tofu, mushrooms, and broth.

Step 4: Garnish and Serve

  • Garnish the miso soup noodles with optional toppings such as seaweed strips, sesame seeds, or chili flakes for added flavor and texture.
  • Serve the soup noodles hot and enjoy!

  • Choose a variety of vegetables: Try to choose a variety of colors and types of vegetables for richer nutrition.
