Description

Country Fried Steak is a classic Southern American dish that usually consists of steak coated in a flour and spice mixture, then fried until golden brown and crispy, and finished with a rich white sauce.

Ingredients

Scale
  • 1 1/2 cups buttermilk
  • 2 large eggs
  • 2 teaspoons salt
  • 4 teaspoons freshly ground black pepper
  • 4 (6-ounce) cube steaks
  • 2 cups flour
  • 1 teaspoon onion powder
  • 1 teaspoon sweet paprika
  • 1/2 cup canola oil
  • 1 tablespoon unsalted butter
  • 1 1/2 cups beef broth
  • 2 teaspoons hot sauce

Instructions

Step 1: Prepare the Steaks

  • In a large bowl, whisk together buttermilk, eggs, 1 teaspoon salt, and 1 teaspoon pepper.
  • Submerge cube steaks in the mixture and refrigerate for at least an hour.

Step 2: Prepare the Flour Mixture

  • In a shallow dish, combine flour, remaining salt, pepper, onion powder, and paprika.
  • Reserve 2 tablespoons of seasoned flour for the gravy.

Step 3: Coat the Steaks

  • Dredge each steak in the flour mixture, then back into the buttermilk mixture, and finally into the flour again.

Step 4: Chill the Steaks

  • Place coated steaks on a cooling rack over a sheet pan and refrigerate for 30 minutes.

Step 5: Fry the Steaks

  • Heat oil in a large skillet to 350°F.
  • Fry steaks for 3 to 4 minutes per side until golden brown.
  • Transfer to a clean cooling rack over a baking sheet and keep warm in a 200°F oven.

Step 6: Prepare the Gravy

  • In the same skillet, add butter and reserved flour. Whisk until lightly browned.
  • Pour in beef broth and hot sauce, whisking continuously.
  • Simmer for 3 minutes until the gravy thickens.

Step 7: Serve

  • Top fried steaks with gravy and serve with your favorite sides.

Notes

  • Choose cutlets suitable for frying and make sure they are of even thickness.
  • Dust with flour and egg wash before coating with breadcrumbs.
  • Control the temperature of the oil when frying to ensure that the meat is fried until golden brown and crispy, and cooked inside.
