Treat your mom to a delicious surprise breakfast on Mother’s Day with an easy and simple skillet omelette.


Ingredients

  • Cooking spray or vegetable oil/butter for greasing
  • 18 large eggs
  • 1/2 cup milk or non-dairy option
  • 1 1/4 teaspoons kosher salt
  • 1/2 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese or preferred cheese
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion

Instructions

Step 1: Preparation

  • Preheat oven to 375 F.
  • Grease a rimmed half sheet pan generously with cooking spray.

Step 2:  Mix Eggs

  • In a large bowl, whisk eggs, milk, salt, and pepper until well combined.

Step 3: Pour and Top

  • Carefully pour egg mixture into the prepared pan.
  • Sprinkle cheese, bell peppers, and onions evenly over the top.

Step 4: Bake

  • Bake until eggs are cooked through, about 15 minutes.

Step 5: Cool and Serve

  • Let it cool for a few minutes in the pan.
  • Cut into 12 squares with a sharp knife. Enjoy!

Notes

  • Place the prepared sheet pan in the oven before pouring the egg mixture.
  • Carefully pour the mixture into the pan.
