Ingredients
For the Blintzes:
- 1 cup cottage cheese
- 1 cup ricotta cheese
- 2 eggs
- 2 tablespoons sugar
- 1 teaspoon vanilla extract
- Zest of 1 lemon
- 1/4 teaspoon salt
- 8 crepes (store-bought or homemade)
For the Raspberry Sauce:
- 2 cups fresh or frozen raspberries
- 1/4 cup sugar
- 1 tablespoon lemon juice
- 1/4 cup water
- 1 teaspoon cornstarch (optional, for thickening)
Instructions
Step 1: Prepare the Cheese Filling
- In a mixing bowl, combine the cottage cheese, ricotta cheese, eggs, sugar, vanilla extract, lemon zest, and salt. Mix until well combined and smooth.
Step 2: Fill the Crepes
- Lay out the crepes on a clean surface.
- Spoon about 2 tablespoons of the cheese filling onto the center of each crepe.
- Fold the sides of the crepe over the filling, then roll up to enclose the filling completely.
Step 3: Cook the Blintzes
- Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
- Place the filled blintzes seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown.
Step 4: Make the Raspberry Sauce
- In a saucepan, combine the raspberries, sugar, lemon juice, and water.
- Bring the mixture to a simmer over medium heat, stirring occasionally.
- If desired, mix the cornstarch with a little water to form a slurry, then add it to the raspberry mixture to thicken the sauce. Cook for an additional 2-3 minutes until thickened.
- Remove from heat and let cool slightly.
Step 5: Assembly
- Place the cooked blintzes on serving plates.
- Drizzle with the raspberry sauce.
- Serve warm and enjoy!
