  • 8 crepes (store-bought or homemade)

For the Raspberry Sauce:

  • 2 cups fresh or frozen raspberries
  • 1/4 cup sugar
  • 1 tablespoon lemon juice
  • 1/4 cup water
  • 1 teaspoon cornstarch (optional, for thickening)

Instructions

Step 1: Prepare the Cheese Filling

  • In a mixing bowl, combine the cottage cheese, ricotta cheese, eggs, sugar, vanilla extract, lemon zest, and salt. Mix until well combined and smooth.

Step 2: Fill the Crepes

  • Lay out the crepes on a clean surface.
  • Spoon about 2 tablespoons of the cheese filling onto the center of each crepe.
  • Fold the sides of the crepe over the filling, then roll up to enclose the filling completely.

Step 3: Cook the Blintzes

  • Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
  • Place the filled blintzes seam-side down in the skillet and cook for 2-3 minutes on each side, or until golden brown.

Step 4: Make the Raspberry Sauce

  • In a saucepan, combine the raspberries, sugar, lemon juice, and water.
  • Bring the mixture to a simmer over medium heat, stirring occasionally.
  • If desired, mix the cornstarch with a little water to form a slurry, then add it to the raspberry mixture to thicken the sauce. Cook for an additional 2-3 minutes until thickened.
  • Remove from heat and let cool slightly.

  • Place the cooked blintzes on serving plates.
