- 1 (4-pound) beef sirloin roast
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- Salt and black pepper to taste
- 1 cup beef broth
- 2 tablespoons all-purpose flour (for gravy, optional)
Instructions
Step 1: Preheat and Season
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper.
- Pat the beef roast dry with paper towels, then rub the herb mixture evenly over the entire surface of the roast.
Step 2: Sear the Roast
- Heat a large skillet over medium-high heat.
- Once the skillet is hot, add the seasoned roast and sear it on all sides until nicely browned, about 2-3 minutes per side.
Step 3: Roast
- Transfer the seared roast to a roasting pan or baking dish.
- Pour the beef broth into the bottom of the roasting pan.
- Place the roast in the preheated oven and roast uncovered for about 1.5 to 2 hours, or until an instant-read thermometer inserted into the thickest part of the roast registers your desired level of doneness (about 135°F (57°C) for medium-rare, 145°F (63°C) for medium, and 160°F (71°C) for well-done).
- Baste the roast with the pan juices every 30 minutes to keep it moist.
Step 4: Rest and Serve
- Once cooked to your liking, remove the roast from the oven and transfer it to a cutting board.
- Tent the roast loosely with aluminum foil and let it rest for at least 15 minutes before slicing.
- While the roast is resting, you can make gravy by pouring the pan juices into a saucepan and whisking in flour over medium heat until thickened.
- Slice the roast thinly against the grain and serve with your favorite side dishes.
