  • 1 cup of quinoa
  • 1 can of black beans, drained and rinsed
  • 1/2 cup of corn kernels
  • 1/2 cup of salsa
  • 1/4 cup of chopped cilantro
  • 1 teaspoon of ground cumin
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 small onion,diced
  • 2 cloves garlic,minced
  • 1 can diced tomatoes,drained
  • 1 tablespoon chili powder
