Ingredients
- 2 boneless, skinless chicken breasts
- 2 cups fresh strawberries, hulled and sliced
- 6 cups mixed salad greens
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
- 2 tablespoons balsamic vinegar
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
Step 1: Cook the Chicken
- Preheat your grill or grill pan over medium-high heat.
- Season the chicken breasts with salt and pepper.
- Grill the chicken for about 6-7 minutes per side, or until cooked through and no longer pink in the center.
- Remove from the grill and let it rest for a few minutes before slicing into strips.
Step 2: Prepare the Salad
- In a large mixing bowl, combine the salad greens, sliced strawberries, sliced almonds, and crumbled feta cheese.
- Add the sliced chicken to the salad.
Step 3: Make the Dressing
- In a small bowl, whisk together the balsamic vinegar and olive oil until well combined.
- Season with salt and pepper to taste.
Step 4: Assemble the Salad
- Drizzle the dressing over the salad and toss gently to coat everything evenly.
- Divide the salad among serving plates or bowls.
- Serve immediately and enjoy!
