Description

Salmon cakes are a delightful and versatile dish, perfect for Good Friday. They offer a light yet satisfying meal, ideal for those observing the tradition of abstaining from meat. This recipe combines fresh salmon with aromatic herbs and spices, resulting in crispy, golden cakes that are delicious and easy to make.

Ingredients

Scale
  • 1 lb fresh salmon fillets
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped bell pepper
  • 1/4 cup finely chopped parsley
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 large egg, beaten
  • 1 teaspoon Old Bay seasoning
  • Salt and pepper to taste
  • 2 tablespoons olive oil (for frying)
  • Lemon wedges (for serving)

Instructions

Step 1: Prepare the Salmon

  • Preheat your oven to 400°F (200°C). Place the salmon fillets on a baking sheet lined with parchment paper.
  • Season the fillets with salt and pepper, then bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Remove the salmon from the oven and let it cool slightly. Flake the salmon into a large mixing bowl, discarding any skin and bones.

Step 2: Mix the Ingredients

  • Add the breadcrumbs, chopped onion, bell pepper, parsley, mayonnaise, Dijon mustard, lemon juice, beaten egg, and Old Bay seasoning to the bowl with the flaked salmon.
  • Gently mix all the ingredients until well combined. Be careful not to over-mix, as this can break down the texture of the salmon.

Step 3: Form the Salmon Cakes

  • Divide the mixture into 8 equal portions and shape each portion into a patty, about 1/2 inch thick.
  • Place the patties on a plate and refrigerate for 15 minutes. This helps them firm up and hold their shape during cooking.

Step 4: Cook the Salmon Cakes

  • Heat the olive oil in a large skillet over medium heat.
  • Once the oil is hot, add the salmon cakes to the skillet in batches, making sure not to overcrowd the pan.
  • Cook the cakes for 3-4 minutes on each side, or until they are golden brown and crispy.
  • Remove the salmon cakes from the skillet and drain on paper towels.

Notes

  • Select fresh salmon: When making salmon cakes, it’s important to choose fresh salmon fillets or salmon leftovers from a recent meal. Look for firm, brightly colored fillets with no fishy odor. If using leftovers, ensure they are properly refrigerated and still in good condition.
  • Enhance the flavors with seasonings: Salmon cakes can be jazzed up with a variety of seasonings. Consider adding chopped green onions, fresh dill, minced garlic, and a pinch of red pepper flakes for a burst of flavor. To bind the ingredients together, use ingredients like breadcrumbs and beaten egg. Adjust the seasonings to suit your taste and mix well to distribute them evenly.
  • Cook with the right technique: For perfectly cooked salmon cakes, preheat a non-stick skillet over medium heat and add a drizzle of olive oil. Shape the salmon mixture into patties and carefully place them in the pan. Cook for 3-4 minutes per side until the cakes are golden brown and crispy on the outside, and the salmon inside is cooked through and tender. Avoid overcrowding the pan to ensure even cooking and a nice crust.
