Ingredients
- 1 pound (450g) linguine pasta
- 1 pound (450g) large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1/2 cup (115g) unsalted butter
- 1/4 cup (60ml) extra-virgin olive oil
- 1/4 cup (60ml) dry white wine
- 1/4 cup (15g) chopped fresh parsley
- 1 tablespoon (15ml) freshly squeezed lemon juice
- Salt and black pepper to taste
- Red pepper flakes (optional, for heat)
- Grated Parmesan cheese for serving
Instructions
Step 1: Prepare the Pasta
- Bring a large pot of salted water to a boil.
- Cook the linguine according to package instructions until al dente.
- Reserve 1/2 cup of pasta water, then drain the linguine.
Step 2: Cook the Shrimp
- In a large skillet, heat the olive oil over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add the shrimp to the skillet and season with salt, black pepper, and red pepper flakes if desired.
- Cook the shrimp until they turn pink and opaque, about 2-3 minutes per side.
- Remove the shrimp from the skillet and set aside.
Step 3: Make the Sauce
- In the same skillet, melt the butter over medium heat.
- Pour in the white wine and lemon juice, stirring to combine.
- Let the sauce simmer for 2-3 minutes to reduce slightly.
- Return the cooked shrimp to the skillet.
- Add the cooked linguine and chopped parsley to the skillet, tossing to coat everything evenly.
- If the sauce is too thick, add some of the reserved pasta water to loosen it up.
Step 4: Serve
- Divide the shrimp scampi pasta among serving plates.
- Garnish with additional chopped parsley and grated Parmesan cheese if desired.
- Serve immediately and enjoy your delicious dinner!
