Description

These vegan tacos are both delicious and easy to prepare, making them ideal for hectic evenings. They’re packed with flavor, proving that you don’t need meat or dairy to enjoy a satisfying meal.


Ingredients

  • 1 cup roasted root vegetables (check our associated recipe)
  • ½ cup cooked or canned black beans, rinsed
  • 2 teaspoons extra-virgin olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon ground coriander
  • ¼ teaspoon kosher salt
  • ¼ teaspoon ground pepper
  • 4 corn tortillas, lightly toasted or warmed
  • ½ avocado, sliced into 8 pieces
  • 1 lime, cut into wedges
  • Chopped fresh cilantro and salsa for garnish

Instructions

Step 1:

  • In a saucepan, mix the roasted root vegetables, black beans, olive oil, cumin, chili powder, coriander, salt, and pepper.
  • Cover and cook over medium-low heat until warmed through, about 6 to 8 minutes.

Step 2:

  • Spoon the mixture onto the tortillas, dividing it evenly.
  • Add avocado slices on top. Serve with lime wedges.

Step 3:

  • Garnish with cilantro and salsa as desired.

Notes

  • When roasting the veggies, make sure to cut them into similarly sized pieces so they cook evenly. Also, be careful not to overcrowd the baking sheet as this can cause the vegetables to steam rather than roast.
  • To prevent the tortillas from becoming soggy, warm them up on a dry skillet or in the oven before assembling the tacos. This will also help to make them more pliable and easier to fold.
  • Don’t be afraid to adjust the seasoning to your preferences. You can add more spice, salt, or lime juice depending on your taste. You can also experiment with different toppings such as fresh cilantro, avocado, or hot sauce to personalize the tacos.
