These vegan tacos are both delicious and easy to prepare, making them ideal for hectic evenings. They’re packed with flavor, proving that you don’t need meat or dairy to enjoy a satisfying meal.
Ingredients
- 1 cup roasted root vegetables (check our associated recipe)
- ½ cup cooked or canned black beans, rinsed
- 2 teaspoons extra-virgin olive oil
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- ½ teaspoon ground coriander
- ¼ teaspoon kosher salt
- ¼ teaspoon ground pepper
- 4 corn tortillas, lightly toasted or warmed
- ½ avocado, sliced into 8 pieces
- 1 lime, cut into wedges
- Chopped fresh cilantro and salsa for garnish
Instructions
Step 1:
- In a saucepan, mix the roasted root vegetables, black beans, olive oil, cumin, chili powder, coriander, salt, and pepper.
- Cover and cook over medium-low heat until warmed through, about 6 to 8 minutes.
Step 2:
- Spoon the mixture onto the tortillas, dividing it evenly.
- Add avocado slices on top. Serve with lime wedges.
Step 3:
- Garnish with cilantro and salsa as desired.
