Ingredients

- Two (3/4-pound) bone-in rib-eye steaks, at least 1-inch thick
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon neutral oil
- 2 tablespoons unsalted butter (optional)
Instructions
Step 1:
- Preheat the oven to 350°F.
Step 2:
- Let the steaks sit at room temperature for 20 to 40 minutes.
- Season the steaks with salt and pepper.
Step 3:
- Heat the oil in a cast-iron pan over medium-high heat.
- Sear the steaks for 3 to 4 minutes on each side.
- Add butter on top of each steak if desired.
Step 4:
- Finish cooking in the oven for 3 to 5 minutes.
- Let the steaks rest for at least 5 minutes before slicing and serving.
