  • 1 cup whole milk
  • 1 1/4 cups all-purpose flour
  • 2 large eggs, beaten
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted and cooled
  • 1/2 teaspoon vanilla extract
  • Neutral oil, such as vegetable or canola oil (or butter), for greasing the pan or griddle
  • Berries, garnish
  • Maple syrup, garnish
  • Powdered sugar, garnish
  • Melted butter, garnish

Instructions

Step 1:

  • Combine the sourdough starter with milk and flour in a large bowl, covering it with plastic wrap and leaving it on the counter overnight to rise and develop its flavor.

Step 2:

  • In the morning, add beaten eggs, sugar, baking powder, and salt to the sourdough mixture, whisking until smooth.
  • Mix in the cooled melted butter and vanilla extract, creating a thick batter.

Step 3:

  • Heat a skillet or griddle over medium-high heat, adding a bit of neutral oil or butter.
  • Ladle 1/4 cup of batter onto the skillet, cooking until bubbles form on top and the underside is browned.
  • Flip the pancakes and cook for another minute on the other side. Watch carefully, as the second side cooks faster.

Step 4:

  • Repeat with the remaining batter, then serve with desired garnishes.

Notes

  • Use well-fermented yeast to thin the batter and make sure it is fully fermented, which will add to the texture and aroma of the pancakes. It is recommended to ferment the batter well in advance before making, which usually takes at least 12 hours.
