- 6 sheets matzo
- 4 cups fresh spinach, chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 eggs
- 1/4 cup milk
- Salt and pepper to taste
- Olive oil for cooking
Instructions
Step 1: Prepare the Matzo
- Preheat your oven to 375°F (190°C).
- In a large bowl, break the matzo sheets into small pieces.
- Pour hot water over the matzo and let it soak for about 2 minutes, until softened.
- Drain the softened matzo and set aside.
Step 2: Prepare the Filling
- Heat a drizzle of olive oil in a skillet over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
- Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
- Remove the skillet from heat and let the mixture cool slightly.
Step 3: Mix the Filling
- In a large mixing bowl, combine the softened matzo, cooked spinach mixture, ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, eggs, milk, salt, and pepper.
- Mix everything until well combined.
Step 4: Assemble and Bake the Pie
- Grease a 9×13-inch baking dish with olive oil.
- Pour the spinach and cheese mixture into the prepared baking dish, spreading it out evenly.
- Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the filling is set.
- Remove from the oven and let it cool slightly before slicing and serving.
