Description

This Spinach and Cheese Matzo Pie combines fresh spinach, tangy cheese, and crunchy unleavened bread for a rich, flavorful, modern interpretation of a delicious and healthy traditional Jewish recipe.

  • 4 cups fresh spinach, chopped
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 4 eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

Step 1: Prepare the Matzo

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, break the matzo sheets into small pieces.
  • Pour hot water over the matzo and let it soak for about 2 minutes, until softened.
  • Drain the softened matzo and set aside.

Step 2: Prepare the Filling

  • Heat a drizzle of olive oil in a skillet over medium heat.
  • Add the chopped onion and minced garlic, sautéing until softened and fragrant, about 3-4 minutes.
  • Add the chopped spinach to the skillet and cook until wilted, about 2-3 minutes.
  • Remove the skillet from heat and let the mixture cool slightly.

Step 3: Mix the Filling

  • In a large mixing bowl, combine the softened matzo, cooked spinach mixture, ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, eggs, milk, salt, and pepper.
  • Mix everything until well combined.

Step 4: Assemble and Bake the Pie

  • Grease a 9×13-inch baking dish with olive oil.
  • Pour the spinach and cheese mixture into the prepared baking dish, spreading it out evenly.
  • Bake in the preheated oven for 35-40 minutes, or until the top is golden brown and the filling is set.
  • Remove from the oven and let it cool slightly before slicing and serving.
