Description

This Stuffed French Toast will add a cozy touch to your Mother’s Day, allowing you to serve her a delicious and heartfelt breakfast.

Ingredients

Scale
  • 6 (1-inch) slices of brioche or challah bread (preferably day-old)
  • 8 ounces of cream cheese (at room temperature)
  • 1 cup plus 1 tablespoon of whole milk (divided)
  • 3 tablespoons of sugar (plus more to taste, if desired)
  • 2 teaspoons of vanilla extract (divided)
  • 4 large eggs
  • 1/4 teaspoon of kosher salt
  • 1/2 teaspoon of cinnamon or cardamom (optional)
  • 1 tablespoon of butter (or more, for the pan)
  • Fresh berries or peaches, powdered sugar, maple syrup, additional butter (optional for garnish)

Instructions

Step 1: Prepare the Filling:

  • In a small bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Set aside.

Step 2: Make the French Toast:

  • In a shallow dish, whisk together the eggs, milk, vanilla extract, and ground cinnamon until well combined.
  • Spread the cream cheese filling on two slices of bread, then top with the remaining two slices to make sandwiches.

Step 3: Dip and Cook:

  • Preheat a skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.
  • Dip each stuffed sandwich into the egg mixture, ensuring both sides are well coated.
  • Place the dipped sandwiches onto the skillet or griddle and cook for 3-4 minutes on each side, or until golden brown and the filling is warm.

Step 4: Serve:

  • Once the stuffed French toast is cooked, remove it from the skillet and place it on a plate.
  • Optionally, top with fresh berries, sliced bananas, a sprinkle of powdered sugar, or a drizzle of maple syrup before serving.

Notes

  • Choose a thick bread, such as brioche or challah, to ensure that the bread will be able to carry the fillings and the soaking process.
  • Allow the fillings to soak in the egg mixture for about 20-30 seconds to ensure the bread absorbs enough flavor without becoming too soggy.
  • Cook over medium heat to avoid excessive heat that will cause the outside to brown too quickly while the inside remains undercooked.
