- 4 eggs
- Chopped parsley or cilantro for garnish (optional)
Instructions
Step 1: Prepare Sweet Potato Hash
- Heat olive oil in a large skillet over medium heat.
- Add diced sweet potatoes and cook for about 8-10 minutes, stirring occasionally, until they start to soften.
- Add diced onion, minced garlic, and diced bell pepper to the skillet. Cook for another 5-7 minutes until the vegetables are tender and fragrant.
- Season the mixture with paprika, cumin, salt, and pepper. Stir well to combine. Cook for an additional 2-3 minutes to allow the flavors to meld together.
Step 2: Cook Eggs and Assemble
- Make four wells in the sweet potato mixture using a spoon. Crack one egg into each well.
- Cover the skillet and cook for 5-7 minutes, or until the eggs are cooked to your desired level of doneness.
- Once the eggs are cooked, remove the skillet from heat.
Step 3: Serve
- Sprinkle chopped parsley or cilantro over the sweet potato hash and eggs.
- Serve hot, directly from the skillet, dividing the hash and eggs evenly among plates.
