Sweet Strawberry Pie is a delectable dessert bursting with the fresh, juicy flavors of ripe strawberries, nestled in a flaky, buttery crust, and topped with a dollop of creamy whipped cream.

- 2 quarts fresh strawberries (about 3 pounds)
- 3/4 cup granulated sugar (150 grams)
- Juice of 1/2 lemon (around 1 tablespoon)
- 3 tablespoons cornstarch
- 1/2 cup cool water
- 1/2 teaspoon vanilla extract
- One 9-inch blind-baked pie crust or store-bought crust, baked per package directions
- Optional whipped cream for serving
Instructions
Step 1:
- Select the largest, most appealing strawberries and arrange them stem-side down in the pie dish.
- Wash, core, and slice the remaining strawberries.
- In a medium saucepan, combine sliced strawberries with sugar and lemon juice. Boil for 5 minutes.
Step 2:
- Whisk cornstarch and water until smooth, then add to the boiling mixture.
- Boil for 1 more minute until thickened, then remove from heat and stir in vanilla. Cool for 30 minutes.
- Fill the baked pie shell with the strawberry mixture.
- Arrange whole berries on top of the filling, starting from the center and spiraling outward. Glaze with the filling gel using a pastry brush.
Step 3:
- Chill the pie for at least 4 hours, or preferably overnight, for the best results.
- Serve chilled, optionally with whipped cream.
