  • 1/2 pound boiled octopus, cut into small cubes

Homemade Takoyaki Sauce:

  • 3 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or sugar

Instructions

Step 1:Prepare the Batter

  • In a large bowl, whisk together the flour, eggs, dashi (or water), soy sauce, baking powder, and salt until smooth and free of lumps.
  • The batter should be thin and runny.

Step 2:Heat the Takoyaki Pan

  • Heat a Takoyaki pan over medium heat.
  • Generously grease each cavity with vegetable oil using a brush or paper towel.

Step 3:Cook the Takoyaki

  • Pour the batter into each cavity of the Takoyaki pan, filling them to the brim. The batter should overflow slightly.
  • Add a piece of octopus, a pinch of green onions, a few tempura scraps, and a little pickled ginger (if using) to each cavity.
  • Allow the batter to cook for about 1-2 minutes until the edges start to set. Using a Takoyaki pick or a skewer, carefully turn each piece 90 degrees to form a rough ball shape. Add a bit more batter to fill any gaps and turn again to complete the ball shape.
  • Continue to cook and turn the Takoyaki until they are evenly golden brown and crispy on the outside, about 5-7 minutes.

Step 4:Serve

  • In a small bowl, mix together the ketchup, Worcestershire sauce, soy sauce, and honey (or sugar) until well combined.
  • Transfer the cooked Takoyaki to a serving plate.
