  • 2 bunches mustard greens
  • ½ cup grated Parmesan cheese
  • ⅓ cup olive oil
  • ¼ cup lemon juice
  • 3 cloves garlic, minced
  • 1 tablespoon reduced-sodium soy sauce
  • 1 minced anchovy fillet or ½ teaspoon anchovy paste (optional)
  • ½ teaspoon ground pepper
  •  ¼ teaspoon salt

 


Instructions

Step 1:

  • In a large salad bowl, combine the chopped mustard greens, sliced almonds, dried cranberries, and crumbled feta cheese.

Step 2:

  • Add Parmesan, oil, lemon juice, garlic, soy sauce, anchovy (if using), pepper, and salt.
  • With clean hands, massage and crush the greens until they shrink by about half, looking darker and shiny.

Step 3:

  • Taste and adjust seasoning with more Parmesan, lemon juice, garlic, soy sauce, or pepper if needed.

Notes

  • Choose fresh and tender mustard greens: When shopping for greens, look for leaves that are crisp, bright, and free of yellow or brown spots. If the stems are tough, remove them and use only the tender leaves. To enhance the flavor of the greens, soak them in cold water for 10-15 minutes before rinsing and drying.
  • Mix a tangy dressing: Prepare a zesty dressing by whisking together Dijon mustard, honey, apple cider vinegar, olive oil, and a pinch of salt and pepper. Adjust the ingredients according to your preference to achieve the right balance of sweet and tangy flavors.
