Description

Do you enjoy spicy tuna sushi? Then you’ll love these wraps! We think they’re delicious with peppery watercress, but you can use other greens like arugula or romaine if you prefer. For a sushi vibe, mix some wasabi into soy sauce for dipping and add pickled ginger. Pair with sliced cucumbers and red onions tossed in rice vinegar, a bit of oil, and a pinch of salt.


Ingredients

  •     2 cans of chunk light tuna (make sure they’re drained)
  •     ⅓ cup of low-fat mayonnaise
  •     1 tablespoon of hot sauce (like Sriracha)
  •     1 chopped scallion
  •     2 cups of cooked brown rice
  •     2 tablespoons of rice vinegar
  •     4 whole-grain wraps
  •     3 cups of watercress leaves
  •     1 ripe avocado (sliced into 16 pieces)
  •     1 small carrot (cut into matchsticks)
  •     Reduced-sodium soy sauce for dipping (optional)

Instructions

Step1: 

  • In a bowl, mix tuna, mayonnaise, hot sauce, and scallion.

Step2:

  • Combine rice and vinegar in another bowl.

Step3:

  • Spread a quarter of the tuna mix on a wrap.
  • Top with half a cup of rice, three-quarters cup of watercress, four avocado slices, and a quarter of the carrot matchsticks.

Step4:

  • Roll up the wrap and cut into quarters or halves.
  • Repeat for the remaining wraps and filling.
  • Serve with soy sauce for dipping if you like.

Notes

  • Be mindful of mercury levels in chunk light tuna. It’s recommended to limit intake, especially for pregnant women, nursing mothers, and young children.
  • Sriracha sauce can be found in the Asian section of most large supermarkets.
  • For brown rice, boil two cups of water with one cup of rice. Simmer until tender, about 40 minutes.
  • To keep your wrap tidy, wrap it in foil, making it easier to eat on the go.
