Description

Tilapia with Tomato Basil Relish is an easy-to-make, refreshing, and nutritious dish that is perfect to enjoy as an everyday family favorite or during the holiday season.

Ingredients

Scale

For the Tilapia:

  • 4 tilapia fillets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 lemon, sliced

For the Tomato Basil Relish:

  • 2 cups cherry tomatoes, quartered
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

Step 1:

  • Prepare the tomato basil relish.
  • In a medium bowl, combine the cherry tomatoes, basil leaves, red onion, and garlic.
  • Drizzle with balsamic vinegar and olive oil, then season with salt and pepper to taste.
  • Mix well and set aside to allow the flavors to meld.

Step 2:

  • Season the tilapia fillets with salt and pepper on both sides.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.

Step 3:

  • Once the oil is hot, add the tilapia fillets to the skillet.
  • Cook for about 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
  • Add lemon slices to the skillet during the last minute of cooking to infuse the fish with a subtle citrus flavor.

Step 4:

  • Transfer the cooked tilapia fillets to a serving platter.
  • Spoon the tomato basil relish over the top of each fillet.
  • Garnish with additional fresh basil leaves if desired.
  • Serve immediately with your choice of side dishes.

Notes

  • For extra flavor, marinate the tilapia in a mixture of olive oil, lemon juice, and herbs for 30 minutes before cooking.
  • If cherry tomatoes are not available, use regular tomatoes and chop them into small pieces.
  • Pair this dish with a light salad or steamed vegetables for a complete meal.
  • Ensure the skillet is hot before adding the tilapia to achieve a nice sear on the fish.
