For the Tilapia:
- 4 tilapia fillets
- 2 tablespoons olive oil

For the Tomato Basil Relish:
- 2 cups cherry tomatoes, quartered
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup red onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
Step 1:
- Prepare the tomato basil relish.
- In a medium bowl, combine the cherry tomatoes, basil leaves, red onion, and garlic.
- Drizzle with balsamic vinegar and olive oil, then season with salt and pepper to taste.
- Mix well and set aside to allow the flavors to meld.
Step 2:
- Season the tilapia fillets with salt and pepper on both sides.
- Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
Step 3:
- Once the oil is hot, add the tilapia fillets to the skillet.
- Cook for about 3-4 minutes on each side, or until the fish is opaque and flakes easily with a fork.
- Add lemon slices to the skillet during the last minute of cooking to infuse the fish with a subtle citrus flavor.
Step 4:
- Transfer the cooked tilapia fillets to a serving platter.
- Spoon the tomato basil relish over the top of each fillet.
- Garnish with additional fresh basil leaves if desired.
- Serve immediately with your choice of side dishes.
