Ingredients
- 4 large tomatoes, diced
- 1 English cucumber, peeled and diced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 cups vegetable broth
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- 2 tablespoons fresh lemon juice
- Optional toppings: chopped fresh basil, croutons, or a dollop of Greek yogurt
Instructions
Step 1:
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic.
- Sauté until the onion is translucent and fragrant, about 3-4 minutes.
Step 2:
- Add the diced tomatoes, cucumber, vegetable broth, dried oregano, and dried basil to the pot.
- Season with salt and pepper to taste.
- Bring the mixture to a simmer, then reduce the heat to low.
- Cover and let it simmer for about 15 minutes, allowing the flavors to meld together and the vegetables to soften.
Step 3:
- Once the vegetables are tender, remove the pot from the heat.
- Use an immersion blender to carefully blend the soup until smooth.
- Alternatively, you can transfer the soup in batches to a blender and blend until smooth, being cautious of the hot liquid.
Step 4:
- Return the blended soup to the pot if necessary.
- Stir in the fresh lemon juice, adjusting the seasoning if needed.
- Taste and add more salt and pepper if desired.
