This delicious vegetable lasagna not only lets you enjoy the charms of Italian cooking, but also provides your body with a wealth of nutrients and health benefits.

- 9 lasagna noodles, cooked according to package instructions
- 2 cups marinara sauce
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cups assorted vegetables (such as spinach, mushrooms, zucchini, bell peppers), chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish (optional)
Instructions
Step 1:
- Preheat your oven to 375°F (190°C).
Step 2:
- In a skillet, heat olive oil over medium heat.
- Add minced garlic and cook until fragrant, about 1 minute.
- Add chopped vegetables and cook until they are tender, about 5-7 minutes.
- Season with salt and pepper to taste.
Step 3:
- In a mixing bowl, combine ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan cheese.
- Mix well until combined.
Step 4:
- In a 9×13 inch baking dish, spread a thin layer of marinara sauce on the bottom.
- Place three cooked lasagna noodles on top. Spread half of the ricotta mixture over the noodles, followed by half of the cooked vegetables.
- Repeat the layers – marinara sauce, noodles, ricotta mixture, vegetables.
- Top with remaining marinara sauce and sprinkle the remaining mozzarella and Parmesan cheese on top.
Step 5:
- Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.
Step 6:
- Remove from the oven and let it cool for a few minutes before slicing.
- Garnish with fresh basil leaves if desired.
