Description

This delicious vegetable lasagna not only lets you enjoy the charms of Italian cooking, but also provides your body with a wealth of nutrients and health benefits.


Ingredients

  • 9 lasagna noodles, cooked according to package instructions
  • 2 cups marinara sauce
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cups assorted vegetables (such as spinach, mushrooms, zucchini, bell peppers), chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish (optional)

Instructions

Step 1:

  • Preheat your oven to 375°F (190°C).

Step 2:

  • In a skillet, heat olive oil over medium heat.
  • Add minced garlic and cook until fragrant, about 1 minute.
  • Add chopped vegetables and cook until they are tender, about 5-7 minutes.
  • Season with salt and pepper to taste.

Step 3:

  • In a mixing bowl, combine ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan cheese.
  • Mix well until combined.

Step 4:

  • In a 9×13 inch baking dish, spread a thin layer of marinara sauce on the bottom.
  • Place three cooked lasagna noodles on top. Spread half of the ricotta mixture over the noodles, followed by half of the cooked vegetables.
  • Repeat the layers – marinara sauce, noodles, ricotta mixture, vegetables.
  • Top with remaining marinara sauce and sprinkle the remaining mozzarella and Parmesan cheese on top.

Step 5:

  • Cover the baking dish with foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

Step 6:

  • Remove from the oven and let it cool for a few minutes before slicing.
  • Garnish with fresh basil leaves if desired.

Notes

  • Feel free to customize the vegetables according to your preference or what you have on hand.
  • You can make this lasagna ahead of time and refrigerate it before baking. Just increase the baking time by 10-15 minutes if baking from cold.
  • Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
