Description

This classic Waldorf salad features fresh apples and walnuts, and the refreshing fruit and nutty textures complement each other for a deliciously healthy treat.

Ingredients

Scale
  • 2 large apples (preferably Granny Smith or Gala), cored and diced
  • 1 cup seedless grapes, halved
  • 1 cup celery, diced
  • 1/2 cup walnuts, chopped
  • 1/2 cup plain Greek yogurt (low-sodium)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey
  • 1/4 teaspoon salt (optional, based on dietary restrictions)
  • Fresh lettuce leaves for serving

Instructions

Step 1

  • Prepare all the fresh ingredients.
  • Core and dice the apples into bite-sized pieces.
  • Cut the grapes in half. Dice the celery into small, even pieces.
  • Chop the walnuts if they are not already in small pieces.

Step 2

  • In a large mixing bowl, combine the diced apples, halved grapes, diced celery, and chopped walnuts.
  • Toss them gently to mix the ingredients evenly.

Step 3

  • In a small bowl, whisk together the plain Greek yogurt, lemon juice, honey, and salt (if using).
  • This mixture will serve as the dressing for the salad.

Step 4

  • Pour the dressing over the apple mixture and toss gently until all the ingredients are well-coated.
  • Be careful not to mash the ingredients while mixing.
  • Once everything is evenly combined, cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

Step 5

  • When ready to serve, place fresh lettuce leaves on a serving platter or individual plates.
  • Spoon the Waldorf Salad onto the lettuce leaves and garnish with additional walnuts or a few extra grape halves if desired.

Notes

  • Using a mix of sweet and tart apples can add a delightful contrast in flavors.
  • For those who prefer a dairy-free option, you can use coconut yogurt or another plant-based yogurt that is low in potassium and phosphorus.
  • If walnuts are not preferred, pecans or almonds can be used, but ensure they fit within dietary restrictions.
  • For extra flavor and texture, consider adding a small amount of diced red onion or raisins. Ensure any additions are compatible with a renal diet.
  • This salad can be prepared in advance and stored in the refrigerator. It’s best enjoyed within 24 hours of preparation.
